What’s the Difference between Fruitcakes, Biencakes, and Teacakes?

Fruitcakes: Our fruitcakes, including sugar-free and apple cider cakes, consist of about 75% fruit and 25% cake batter. Fruit is soaked in liquor overnight, unless it’s for the sugar-free and apple cider cakes; fruit for them is soaked in non-alcoholic apple cider overnight. Once baked, fruitcakes are washed with liquor, or again for sugar-free and apple cider cakes, with non-alcoholic apple cider.

Biencakes: Consist of 50% fruit, 50% cake batter. The fruit is soaked in liquor overnight, and the Biencakes are washed with liquor after baking and cooling.

Teacakes: Consist of 50% fruit, 50% cake batter. Teacakes are alcohol-free—the fruit is soaked in water plus a sweetener--maple syrup, honey, and/or sugar syrup. They are not washed with liquor or cider once baked.
